#213: 18/10/11 A few recipes from the week to tickle your taste buds

watched a video on how to make this amazing light afternoon snack not too long ago but can’t find it - it wasn’t on youtube, if anyone knows of it, please let me know! One of my favourite salads slightly modified due to lack of ingredients. Asparagus salad drizzled with olive oil, lemon juice, subbed roasted pine nuts with crushed peanuts and Parmesan with grated Colby.


Baked herb eggs; Make it up as you go really, but basically grease the ramekins with butter, splash of milk, bacon (optional), two eggs, season with whatever you would like over the top, another tiny splash of milk, knob of butter, oven at 180 until whites are set and yolks are runny (about 15 or so min), pull out now because it will continue to cook while you’re letting it cool.
One pot asparagus, mushroom and spicy pork fettucine in cheese sauce. This is basically the laziest way of making any pasta dish. Boil fettucine in a pot until al dente, drain and leave aside. In the same big pot, add oil and a bit of butter, cook onions until soft, add mushrooms and cook until soft then add asparagus to warm. In a pyrex jug melt 1 tablespoon of butter, then stir in 1 tablespoon of flour, a quarter teaspoon of salt and 1 cup of milk. You can do all this in the microwave - just microwave 30 seconds to 1 minute at a time until thick. Add pasta and sauce to the onions, mushrooms, asparagus. Stir in some cheese to melt through.
