Ina Garten’s aka Barefoot Contessa’s puff pastry cinnamon rolls

Found this recipe here.
What you need:
- 1+ sheet puff pastry
- 1 stick of butter
- 1/3 cup brown sugar
- 1/2 cup pecans chopped; optional
and for the filling - 2 tablespoons butter melted and cooled
- 2/3 cup brown sugar
- 3 teaspoons cinnamon
What to do:
- preheat oven to 180 degrees C
- combine the stick of butter, 1/3 cup brown sugar, distribute evenly among 12 muffin cups, add pecans here if using
- brush the sheet of puff pastry with the melted butter
- sprinkle with remaining ingredients (2/3 cup brown sugar, cinnamon)
- roll up the pastry finishing with seam side down, slice into 2-3cm wide pieces (I suppose the width depends on the depth of your muffin tray)
- place each piece, spiral side up into muffin tray
- bake for 30min, allow to cool 5min and then invert!
The recipe without a name…
Saw this on the food channel one morning and gave it a try the next day; it was on Cook like a Chef but I can’t find the actual recipe/episode to link you to. What it is, is a grated potato cake cooked in clarified butter topped with cream and chives, red onion and prosciutto (and then garnished again with the cream and onion)

What you need:
- 1 large potato
- clarified butter (here’s a how-to by Emeril)
- cream - I used sour cream
- chives - chopped
- red onion - chopped
- proscuitto
What to do:
- grate potato and pat dry with a tea towel - might pay to also squeeze all that water out of it, had no idea it retained that much tbh! The potato needs to be very dry so that it sizzles and crisps up in the pan
- pour a bit of clarified butter into a pan on medium heat, place grated potato in pan, press down to make a cake, place lid over top and flip when the edges are brown and crispy
- when both sides are done, place on a plate and spread the cream (that has been mixed with the chives) over the whole cake
- sprinkle over red onions and then top with proscuitto
- season with pepper, no need for salt as the proscuitto is already salty
This dish was finger-licking good, lots of prep work (and money, someone needs to find me a place that sells prosciutto cheap) but worth it all in the end.
Apricot Crumble

Adapted this from an apple crumble recipe as we didn’t have apples!
What you need:
- some butter to grease ramekins with
- apricot slices
- 1 teaspoon cinnamon
- 2/3 cup rolled oats
- 1/3 cup flour
- 1/3 cup dark brown sugar
- pinch of salt
- 6 tablespoons butter cut into cubes
What to do:
- grease ramekins with butter
- coat apricot slices with cinnamon and divide evenly among ramekins
- combine oats, flour, brown sugar, salt and rub in butter with fingertips until you get pea sized pieces
- sprinkle these over the top of each ramekin
- top with a light dusting of cocoa
- bake for 30 minutes
- serve with ice cream :)
