Two Easy Weeknight Dinners

Brown Rice with Broccoli, Cheese and Bacon

Got the inspiration for this dinner off Pinterest and found the original recipe here, which uses quinoa and no bacon. We don’t currently have quinoa in our pantry so I used brown rice instead and used lots and lots of bacon (because we are both meat eaters)!

What you need:

  • 2 tsp. olive oil
  • 1 small onion, chopped
  • 2 cups brown rice, uncooked
  • 3 1/2 cups chicken broth
  • 2 cups chopped broccoli florets
  • 1/2 cup Parmesan cheese, grated
  • 400g bacon, chopped

What to do:

  • Heat oil in large saucepan on medium heat. Add onions; cook and stir 4 min. or until crisp-tender. Add brown rice; cook and stir 1 min.

  • Add broth; stir. Bring to boil; cover. Simmer on medium-low heat 18 min. or until brown rice is tender. Stir in broccoli; simmer, covered, 2 to 3 min. or until broth is absorbed and broccoli is crisp-tender. 

  • Top with cheese and bacon.

Honey Soy Chicken

This requires little effort, just marinating time and then pop in the oven for an hour.

What you need:

  • 8-10 drumsticks
  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 2-3 cloves garlic, crushed
  • sesame seeds

What to do:

  • Mix all ingredients, except sesame seeds, and coat the chicken drumsticks. If you’ve got the time, set aside for a few hours to marinate (to intensify the flavour) but otherwise lay in a single layer on a baking tray and sprinkle over the sesame seeds.
  • Bake for an hour at 180 degrees C, turning half way through.

#210: 30/9/11 Bloomin’ Onion Bread
What you need:
 1 unsliced loaf sourdough bread
 The recipe calls for Monterey Jack cheese, thinly sliced, however this is not easy to come by in NZ so I subbed it for a mild cheddar
 1/2 cup butter, melted
 1/2 cup finely diced green onion
2 teaspoons poppy seeds
What to do:
 Preheat oven to 180 degrees.
Cut the bread lengthwise and widthwise without cutting through the  bottom crust. The original recipe said the bread was very forgiving which I can 100% vouch for. TIP: using scissors to cut the bread widthwise was far easier after cutting with a knife lengthwise.
Place on a foil-lined baking sheet. Insert cheese slices between cuts.  Combine butter, onion, and poppy seeds. Drizzle over bread. 
Wrap in  foil; place on a baking sheet. Bake at 180 degrees C for 15 minutes.  Unwrap the bread and bake 10 more minutes, or until cheese is melted.
